A group chat has no memory of who was reliable last time unless you personally remember, or someone happens to mention it. Every event effectively re-runs the same vetting process from scratch, for people you may have already worked with before.

When a pay dispute or a no-show happens, a group chat has no record beyond scrollback — no defined rate, no confirmed acceptance, no attendance log. Resolving it becomes a matter of memory and goodwill rather than anything documented.
It doesn't scale past a certain size
